And we expand the lead with things like custom cabinetry, custom NSF-certified sinks and water tanks and unique designs for the exterior signage and lighting. A custom build is a passion project.
Origins:
From Catering Events to Leading Custom Food Truck Designers
Karpatia Trucks was born from our decades of experience in the restaurant and events sector doing food truck catering, festivals, and weddings. As requests for our food truck catering and rentals grew, demand justified having food trucks built for the sole purpose of renting them out more often. One of our first inhouse units purpose built for rental turned into a sale when the customer liked it so much they asked to keep it after the lease expired. And then the penny dropped.
Organizing and running thousands of events over the years helped us develop a clear sense of what makes a great mobile food operation – the food truck design expertise for optimal flow that can only come from time running trucks, not just building them. That hands-on experience with catering and seeing first hand what operators needed on the road became the foundation of everything Karpatia Trucks builds today.
One of the main takeaways being that true standout custom builds outshone and outperformed at every event, exterior-first. Meaning if you sold coffee from a Piaggio Ape or Citroen HY, you’d simply sell more because of the unit’s brand appeal vs. the guy three trucks over at the food truck show that converted a cargo van. People would see it, in person and online, get curious – and book you for events. Add an optimal flow to that true custom design, with proper thinking about capacity and serving times, operations, so lines are only as long as they need to be, and you have a winning truck – if your product is good.

“Karpatia” Trucks?
Karpatia has two production locations covering over 30k sqft, one in Middlebury, Indiana and the other in Budapest, Hungary. The name takes its inspiration from the Hungarian side – the Carpathian mountains or Kárpátok, which properly applied as an adjective, shifts to Karpatia.
The origin story is European and we started selling as an exporter. How hard could it be to put a truck on a boat, after all? Turns out it’s not, but ensuring compliance with all local food truck codes in the county in which it will operate can, mildly put, be a pretty special experience. So, to ensure happy customers, valid warranties and compliant builds we opened our first workshop in the US in Atlanta in 2021.
In 2023, we moved to our current Middlebury, Indiana location at the center of the American RV and trailer industry. Over 80% of America’s RVs are built in Elkhart County. There is a deep production culture and talent pool here that aligns extremely well for a custom food truck builder.
Today, our projects are a testament to this journey and we look forward to adding yours to our collection of exceptional builds.

Jamison has extensive experience designing and running mobile food units. Having consulted on mobile deployments for some of the largest food service companies around, he is the perfect guide to walk you through your build.
Dominic Mattei
Dominic manages the shop and fabrication team in Indiana, ensuring what Jamison agreed with the customer turns into reality.
He already had over 2 decades experience managing production locations for custom RV and other manufacturing business before joining Karpatia.

Can I visit the workshop before committing to a build?
Absolutely. We don’t have a showroom so please inquire and call ahead, but prospective clients are more than welcome to visit the workshop by appointment. Feel free to get in touch and schedule a visit.
How long has Karpatia been building food trucks?
Karpatia has been building and converting food trucks since 2019, growing from a catering and events background into a full custom food truck building operation serving clients across the USA and internationally.
Do you only build new trucks or do you work with existing vehicles?
Both. We build fully custom new units and we convert existing or vintage vehicles — including sourcing the base unit together with you if needed. Whether you have a vehicle in mind or are starting from scratch, we can work with you.
What qualifications does your build team have?
Our team consists of designers and engineers educated across industrial design, automotive engineering, marine engineering, and related disciplines. Every custom build is designed — not just assembled — with full 3D design, mechanical, electrical and plumbing schematics produced before fabrication begins.
Do you assist with food truck health and safety?
A combination of genuine public food safety concerns and protecting vested (restaurant) interests have resulted in high standards that need to be met. And we do, of course, meet them. Even if they make no sense – looking at you, Orange County, and your coffee truck sink sizes! At Karpatia we help you through the food truck plan approval process, and make sure all work on your truck or trailer is built inspection ready.
