SUPPORTING SERVICES: FROM REPAIRS TO WINTERIZATION AND MORE
Whether we built your vehicle or not, these standalone services are available to every operator. They keep your vehicle running, compliant, and earning, long after it leaves the workshop.
Where we are, and who we help: Our workshop is in Middlebury, Indiana, within a roughly three-hour drive of Detroit, Chicago, Indianapolis, and everywhere between. If you operate in that catchment, we’re an easy choice for anything from a quick fix to a full overhaul. Further afield, it comes down to the size of the job: for a small repair, a shop closer to you usually makes more sense, and we’ll say so. But for bigger work we can still be the right team, even coast to coast, since coastal shops can charge upward of $125 an hour.
Tell us what you’re dealing with and we’ll give you an honest assessment, and if it makes sense to send your vehicle our way, we’ll handle the shipping too.
Food Truck Repairs: Minimize downtime
From structural food truck and trailer repairs to commercial-grade kitchen equipment fixes, our workshop gets your mobile business back up and running. Clients send their repairs our way knowing they can trust us to minimize downtime with expert diagnostics and fixes that last. A food truck takes double the wear of an ordinary vehicle. It’s a commercial kitchen and a working vehicle at once, hauling heavy equipment over rough roads and idling for hours at events. So the work tends to fall into three areas, and we cover all of them.
We will assess what your vehicle needs and provide an accurate quote with a full breakdown. Some trucks come in for one fault; others need a handful of things put right at once. Either way, you get an honest evaluation first.
Food Truck Maintenance: Prevention rather than cure
Scheduling your food truck maintenance regularly keeps your investment running reliably and reduces the risk of downtime from unexpected failures. This matters most when your vehicle is the centerpiece of an upcoming campaign or event schedule. Most breakdowns aren’t rare mechanical failures, they’re routine checks that got skipped during a busy stretch.
The simplest way to stay ahead of them is a split rhythm: you handle the day-to-day, and we handle the work that needs a trained eye, the right tools, and a lift. However, everyone knows their own vehicle to a different degree. What one operator handles routinely, another would rather not touch and, if there is any doubt, they probably shouldn’t. Either way, we can take on as much or as little as you need.
| Area | Checks |
|---|---|
| Engine oil and fluids | Oil, coolant, brake and power-steering fluid |
| Brakes, tires, suspension | Wear, pressure, alignment under load |
| Fluid and leak checks | Levels, visible leaks, belt and hose condition |
| Generator | Oil, fuel filter, load test |
| Propane and gas | Leak testing, regulator, fittings |
| Electrical | Battery, alternator, wiring, connections |
| Refrigeration | Coils, seals, temperature holding |
| Fire suppression and venting | Hood, filters, suppression system |
Our hands-on team draws on experience with wildly varying food truck models and use cases to troubleshoot, diagnose, and address potential problems before they surface, which is most often right in the middle of an event. If they spot practical upkeep guidance you might need, they’re always quick to relay those tips too. Whether you need a seasonal check before a busy period or a full scheduled service, we’ll keep your mobile business running like a well-oiled machine. Prevention is always better than cure.
Food Truck Winterization: To service and protect
This is a service we’d recommend for any food truck operator in a climate where temperatures drop significantly during the off-season. We’ve witnessed first-hand how the demands of northern winters can catch up on commercial vehicles, especially vintage models, but newer builds are not immune. So we developed our food truck winterization service, designed to protect your food truck during the off-season. We drain and protect water lines, inspect heating systems, and prepare your vehicle for cold-weather storage so it’s ready to cash in on the money-making season when it rolls back in.
Food Truck Storage: Secure and trusted
Need somewhere secure to store your food truck between activations, events, or seasons? We offer vehicle storage at our workshop, monitored and managed by the same knowledgeable and passionate team that works on our trucks. This is particularly useful for experiential builds that operate on a seasonal or campaign-by-campaign basis. Rather than arranging third-party storage, keep your vehicle with the people who know it best.
Shipping Your Food Truck to and from Our Workshop
Whether you need to move a food truck that isn’t in working condition to our workshop for repairs, or you’re simply in need of our maintenance or winterization services, we take the time-consuming, often stressful weight of shipping off your shoulders, handling transport both ways. As covered above, shipping makes most sense for larger jobs, so if you’re outside our local catchment, ask us and we’ll help you weigh it up. This keeps all that complexity off your desk so you can focus on the aspects of your food truck business or brand activation that matter most.
BUILD-STAGE SOLUTIONS DESIGNED TO PROTECT YOUR INVESTMENT
Every food truck, food trailer, or experiential vehicle that Karpatia custom builds includes a comprehensive set of build-stage solutions. These aren’t add-ons, they’re what take Karpatia’s custom builds and turn them into turnkey food truck business solutions.
Built in, and standard with every build.
Sourcing, Transport, and Delivery
We can source the ideal base unit for your needs and if it needs to be transported from overseas to our workshop (like a classic European Citroën food truck), we can handle that for you. Once fabrication is completed, we can then handle delivery of the completed custom build to your county. Our team manages the full logistics process from crating, to export documentation, customs coordination, and confirmed delivery.
Receive Your Vehicle Inspection Ready
We build off the published rules and guidelines for your jurisdiction, with requirements for NSF-certified equipment, fire suppression systems, health department standards, and local permit structures all in mind from the design stage through to handover. In some areas the health department can be looped in during the build, which strengthens how inspection ready your vehicle is; in others, there’s only a final on-site inspection. Inspectors do have discretion, though, and can interpret the rules or apply new ones we can’t foresee. So if you’re ever faced with a particularly strict inspection that goes beyond the written code, we’ll help with that too. Compliance is built in, not bolted on.
Two-Year Warranty: We Back Our Builds
Every Karpatia build comes with a two-year warranty as standard. It’s a reflection of the confidence we have in our capabilities and our track record. You invest in the vehicle; we stand behind our builds.

FAQs: Still have questions about our food truck repairs and turnkey solutions?
Or if you're ready, have a look at our selection of food truck models.Do you repair food trucks you didn’t build?
Yes. We assess and repair vehicles built elsewhere, including vehicles that have failed inspection or don’t meet local code requirements. Bring it to our Middlebury, Indiana workshop and we’ll tell you honestly what it needs. For clients who aren’t local, we handle the shipping both ways.
How long do food truck repairs take?
It depends on the work. A minor fix can often be turned around same-day or within a couple of days, while jobs that need parts, fabrication, or a major mechanical or compliance rebuild can run one to two weeks or more. We give you a clear timeline once we’ve assessed the vehicle, and we’d rather quote the worst case so you can plan around it.
What is food truck winterization?
Winterization prepares your food truck for cold-weather storage or operation, draining water lines, protecting plumbing, and inspecting heating systems so the vehicle is ready to perform when the season starts again. We offer this service at our Middlebury, Indiana workshop.
How does Karpatia approach compliance and inspection?
We build every vehicle off the published rules and guidelines for your area, advising on equipment specifications, fire suppression requirements, and health department standards relevant to your state and county. Because inspectors can apply their own discretion, we can’t guarantee a pass, but we get you as inspection ready as possible, and we’ll help if you’re ever faced with an unusually strict inspection.
